By definition it is the <strong>season of flowering and abundance<\/strong>.<\/p>\n<\/div>\n<div class=\"content-visibility-auto\">\n<p>The Autosufficienza Centre is situated in the hills of the <strong>Tuscan\u2011Romagnolo Apennines<\/strong>, surrounded by 110\u202fhectares of forest. Every year we experience the seasons in their fullest expression, and we believe it is essential for humans to learn to dance with them. Besides being vital for health, it\u2019s also a lot of fun: hunting for rosehip berries in winter to make jams and mother tinctures, gathering calendula in spring to prepare wonderful oleolites, or harvesting lavender in summer to obtain its precious essential oil. She also works on jams, preserves, pickles, and fermented vegetables, using the gifts the earth provides.<\/p>\n<\/div>\n<div class=\"content-visibility-auto\">\n<p><em>What will she have invented this time?<\/em><\/p>\n<\/div>\n<div class=\"content-visibility-auto\">\n<p>Attention, attention\u2026<\/p>\n<\/div>\n<div class=\"content-visibility-auto\">\n<p>Today she will share her recipe for elder\u2011flower syrup! And, true to the Romagnola spirit of never letting anything go to waste, she will also reveal two more preparations that use the same ingredients, allowing you to experiment freely in the kitchen.<\/p>\n<\/div>\n<div class=\"content-visibility-auto\">\n<p><em>First, a quick note about the elder flower:<\/em><br \/>\n<em>Usually it is harvested from late\u202fApril through May, depending on altitude. Here, at 700\u202fm above sea level, we pick it in May; this year, thanks to abundant rains, the season stretched longer. Ideally the flowers should be gathered away from the rain, otherwise the pollen gets washed away and the blossoms lose fragrance.<\/em><\/p>\n<p><em>Many people discard the mixture of flowers and lemons that is used to make the syrup\u2014what a waste!<\/em><br \/>\n<em>Today I\u2019ll show you how to turn that mixture into a jam you\u2019ll want to lick the whiskers off, and I\u2019ll also give you a few tips for preparing elder\u2011flower sparkling wine to serve your guests as an aperitif. Ready?<\/em><\/p>\n<\/div>\n<div class=\"w-full\">\n<div class=\"progressive-markdown-content\">\n<div class=\"content-visibility-auto\">\n<h2>Elder\u2011Flower Syrup<\/h2>\n<\/div>\n<div class=\"content-visibility-auto\">\n<h3>Ingredients<\/h3>\n<\/div>\n<div class=\"content-visibility-auto\">\n<ul>\n<li>2\u202fL water<\/li>\n<li>25 umbels (flowers) of elder (Sambuco)<\/li>\n<li>1\u202fkg organic whole cane sugar<\/li>\n<li>9 organic lemons<\/li>\n<li>100\u202fml organic apple cider vinegar (a good alternative to citric acid as a preservative)<\/li>\n<\/ul>\n<h3><\/h3>\n<h3>Procedure<\/h3>\n<ol>\n<li>Place the water on the stove and, as it heats, dissolve the sugar into it. Let the mixture cool, then add the apple cider vinegar and you\u2019re set.<\/li>\n<li>Prepare jars for the elder flowers. First remove the green parts\u2014<em>that\u2019s the recommendation<\/em>. Lay the flowers at the bottom of the jar together with lemon slices (seedless!), then pour the cooled water\u2011sugar\u2011vinegar mixture over them.<\/li>\n<li>Seal the jars and let them rest for three days, stirring occasionally.<\/li>\n<li>After three days, strain the liquid through a linen cloth or sterile gauze and pour the resulting syrup into glass bottles.<\/li>\n<li>The bottle will keep for a few weeks in the refrigerator. Instead of discarding it\u2014as you might be tempted to do\u2014you can turn it into a truly spectacular marmalade.<\/li>\n<li>Blend the residual flower\u2011lemon mixture and add 200\u202fg of organic whole\u2011cane sugar per kilogram of the blend.<\/li>\n<li>Transfer the blended mixture to a saucepan and bring it to a boil, stirring regularly.<\/li>\n<li>Once it has boiled sufficiently and reached the desired consistency, pour the hot marmalade into sterilised glass jars, sealing them under vacuum. <em>And it\u2019s ready!<\/em><\/li>\n<\/ul>\n<\/div>\n<div class=\"content-visibility-auto\">\n<h2>Elder\u2011Flower Sparkling Wine<\/h2>\n<\/div>\n<div class=\"content-visibility-auto\">\n<h3>Ingredients<\/h3>\n<\/div>\n<div class=\"content-visibility-auto\">\n<ul>\n<li>6\u202fL water<\/li>\n<li>25 umbels (flowers) of elder (Sambuco)<\/li>\n<li>Juice (seed\u2011free) and zest (yellow part only) of 6 organic lemons<\/li>\n<li>750\u202fg organic whole\u2011cane sugar <strong>or<\/strong> 600\u202fg sugar plus 200\u202fg sultana raisins<\/li>\n<\/ul>\n<h3>Procedure<\/h3>\n<ol>\n<li>Bring the water to a boil, dissolve the sugar, and let the solution cool.<\/li>\n<li>Combine all the ingredients in a container with a snap\u2011on lid and place it in the sun to ferment. Allow fermentation to continue until bubbling stops (typically 6\u20138\u202fdays, depending on temperature).<\/li>\n<li>Filter the mixture and pour it into bottles capped with crown caps. The sparkling wine is ready to drink after 20\u201325\u202fdays.<\/li>\n<li>Keep in mind that it has a short shelf\u2011life; store it in the refrigerator.
