Our cuisine starts with raw ingredients: organic, seasonal, and mostly grown at Autosufficienza farm or sourced from local producers who share our values.
The menu is predominantly vegetarian, designed to highlight grains, vegetables, and legumes. Upon request, we also offer vegan and gluten-free options, always respecting the quality and balance of each dish.
Alongside Romagna tradition, you’ll find recipes inspired by cuisines from other parts of the world: light influences, carefully chosen, that dialogue with the territory without altering its essence.

Autosufficienza’s pizza is the result of a supply chain that begins and ends here.
The oven in which it’s baked was built at the farm, using clay soil from our vegetable garden, straw from our wheat harvest, and spring water. The wood that fuels it comes entirely from our forests.
The dough is made with local ancient grains, homemade sourdough starter, spring water, whole sea salt, and Italian organic extra virgin olive oil. The toppings are organic and, when possible, come directly from our gardens or from organic farms.
For us, this isn’t just a pizza, but a concrete example of the change we want to see in the world.
